I wanted to make banana ice cream, but the grocery store had no ripe bananas. I made a quick decision to grab nutella and just add it to a basic ice cream recipe, and add some hazelnuts. It's so rich and creamy, and who doesn't love nutella?
Ingredients:
2 cups milk
2 cups heavy cream
8 egg yolks
1 tsp vanilla extract
1/2 cup nutella
1/3 cup chopped hazelnuts
Directions:
Whisk the egg yolks in a bowl until a little bit frothy.
Heat the milk and cream in a sauce pan until scalding.
Whisking the whole time, add 1/4 of the the hot milk mixture to the egg yolks. (This is to temper the yolks so they turn to custard instead of scrambled eggs.)
Add the egg mix back into the milk and heat over medium, stirring constantly.
Cook until the custard coats the back of a spoon. (You should be able to drag your finger across the spoon and leave a line.) This should only take a couple of minutes.
Pour the mix into a bowl. Add the nutella and whisk until it's totally incorporated. Add a pinch of salt.
Chill the mixture for a few hours until totally chilled.
Once chilled, pour the mixture into an ice cream maker. Let it churn about 20-30 minutes, until it looks a little fluffy. Add the end, add the nuts until just blended. Scoop the ice cream into a freezer safe container and let chill a couple of hours before serving.
