Blackberry Shrub

This is such a great fruity but not-too-sweet summer cocktail. I saw the Bon App's Shrub Recipe and given my propensity for vinegar, I could resist. You can use any ripe summer fruit. I chose blackberries because they're Jamie's favorite. They were so light and delicious, and dangerous because you hardly taste the alcohol. Don't let the vinegar scare you. No one knew there was any vinegar in them until I told them how the cocktails were made. Can't wait to make them again, and try with another fruit! Maybe nectarines??

Blueberry-Blackberry Tarts

Jamie loves blackberries, and when he had all of his friends over to do his football draft (taking over our living room/TV) I needed an activity. We had this great tart pan that I still hadn't had a chance to use, so I thought it was a perfect time to try a tart. Yum! It was really great. Super fresh and summery, and the crust is incredible. You have to make it yourself instead of buying premade pie crust because the tart crust is different than pie crust. It's more like shortbread. It's a little tougher to work with, but it's so tasty. Jamie brought some to work and it was gone within half an hour. It's a bit of a labor of love, but well worth it. It's not too sweet and really concentrates the berry flavor.

Ingredients:
Crust
1 large egg yolk
1 tbsp heavy cream
1/2 tsp vanilla extract
1 3/4 cup all purpose flour
2/3 cup confectioner's sugar
1/4 tsp salt
8 tbsp butter, cut into 1/4-inch pieces and chilled

Tart
6 tbsp unsalted butter
1 large egg plus 1 large white
1/2 cup plus 1 tbsp sugar
1/4 tsp salt
1 tsp vanilla extract
1/4 tsp grated lemon zest, plus 1 1/2 tsp juice
2 tbsp corn starch
2 tbsp heavy cream
12 oz (or more) mix of blueberries and blackberries
