Balsamic Glazed Salmon on a Cedar Plank

This is awesome! Jamie and I picked up two cedar planks a while back and hadn't gotten around to using them until last night. I wasn't sure it would make a huge difference, but wow, it definitely does! It gives the salmon this amazing, smokey, camp fire flavor. It was so, so good and I can't wait to try it again. I made a balsamic glaze to put on top which complemented it perfectly. You just have to soak the plank for at least an hour beforehand and you're ready to go. 


Serves 2
Ingredients:
1 lb salmon filet
1/3 cup balsamic vinegar
1 garlic clove, minced
1 tsp whole grain mustard
1/2 tsp honey
1 tbsp butter
salt and pepper
1 cedar grilling plank

Directions:
At least 1 hour before you want to grill, soak to cedar plank in water. (I filled a cookie sheet with water and weighted the plank down with a jar.) Put the vinegar, mustard, and garlic in a small sauce pan.
Stir it up.
Cook it over medium/medium-low until it thickens and you can drag a spatula through it and leave a line.
Whisk in the butter and honey. You should have a dark, tar-like glaze. Pour into a bowl or some tupperware until you're ready to grill.
In the mean time, salt and pepper the salmon.
When you're ready to grill, get a BBQ nice and hot. Put the salmon on the plank and cover it liberally with the glaze.
Make a little tent over the plank with tin foil. (If your grill has a lid, you don't need to do this.
Grill the salmon for 20 minutes and check for doneness. Enjoy!
We grilled down by the river in Brooklyn Bridge Park - such a nice place to take advantage of the good summer weather.
