Black Garlic-Roasted Cornish Game Hen

This is a simple and tasty weeknight dinner. I used black garlic, but you can swap in regular garlic - just halve it and mash it to a paste. The black garlic is a sweeter more subtle garlic flavor. 
Ingredients:
1 Cornish game hen, butterflied
2 cloves black garlic
2 tbsp butter, room temp
1 tsp balsamic vinegar
1 tsp kosher salt

Directions:
Preheat oven to 450. Mash the black garlic into a paste with salt. Mash into butter with vinegar. 
Gently loosen the skin in a few places on the hen and wiggle your finger around to make space. Evenly distribute the butter mix under the skin of the breast and legs. 
Rub any extra on your hands on top of the bird. 
Season bottom with salt. 
Sprinkle salt and pepper. Bake for 30 minutes and let rest for 10. Split and serve. (I served with salad and ricotta and butternut squash tart.)
