Yum! I want to eat this again right now. It's a big, gooey, melty chocolate chip cookies covered in vanilla ice cream. What's not to love? This serves two in a 5" inch skillet, but there's leftover dough. You can also do ramekins to make individual servings.
Ingredients:
6 tbsp unsalted butter, softened to room temperature
½ cup granulated sugar
½ cup packed dark brown sugar
1 large eff
1 tsp vanilla extract
1 cup all-purpose flour
½ tsp baking soda
½ tsp kosher salt
1 cup semisweet chocolate chips
Vanilla ice cream
Directions:
Preheat oven to 350.
Combine butter, sugar, and brown sugar with an electric
mixer. Mix until light and fluffy. Add in egg and vanilla and mix on low until
incorporated. Stir in flour, baking soda, and salt. Stir in chocolate chips.
Transfer enough dough to fill a small (about 5”) cast-iron
skillet – or you can use ramekins. (Keep any extra dough for later.) Spread
evenly and smooth the top. Sprinkle with a little extra salt.
Bake 18-20 minutes, or until golden brown and just set in
the center. Immediately scoop vanilla ice cream on top and serve with two
spoons.
