Another bass recipe! Ceviche. I love making ceviche, and this one is very easy. It's perfect with super fresh fish (other thick, white fish will work well too, like mahi mahi).
Ingredients:
1 1/2" thick striped bass fillet, diced
1/4 of a red onion, finely diced
1 fresh cayenne pepper, minced (you can also use a jalapeno)
juice of 2 limes (or more)
handful of cilantro, chopped
big pinch of salt
Directions:
Put the fish in a small, non-reactive bowl and sprinkle salt over. Put lime juice over the fish until it is just barely covered. Add in the remaining ingredients, mix, and taste to adjust salt and heat. Top off with more lime juice if necessary and let it sit 30 minutes. Drizzle with good extra virgin olive oil and mix. Serve with chips.
