If you need a new make-ahead salty cocktail snack, this is it. It's salty and sweet and crunchy and bursting with flavor. It's completely addictive and totally delicious.
Ingredients:
1/2 cup brown sugar
1/4 cup nuts (I like spicy smokehouse almonds)
1/4 tsp cumin
1/2 tsp paprika
1/2 tsp chipotle powder
1/2 tsp oregano
1 tbsp maple syrup
1/2 lb bacon
Directions:
Blend first six ingredients in a food processor. Add maple syrup until it's almost in a sandy paste. Season to taste with more sugar or chipotle as you like.
Preheat the oven to 400. Line a cookie sheet with foil and put bacon on the sheet.
Cover it liberally with the mixture. Pop it in the oven.
Cook the bacon for about 10 minutes and check on it. The sugar can burn a little. Remove any pieces that seem done and keep the others in. You want them to be crispy but not burnt.
Put them on a fresh sheet of foil until they firm up/cool down, then transfer them to sheets of paper towel to de-grease them. (If you put them directly onto the paper towel they often stick.)
Break the bacon up into easy, bite-size pieces. If you make them earlier in the day, just keep them in an airtight container until you're ready to serve.
