Homemade Tortillas

As promised, now for the homemade tortilla recipe. It's really easy and pretty quick. It would be really quick if I had a griddle and could fit more tortillas on at once (my cast iron skillet only fits two at a time and even then they overlap). They taste great and fresh and are nice and pliable. 

Makes about 8-10 tacos
Ingredients:
1 cup masa harina corn flour (it should say good for tamales and tortillas on the bag)
3/4-1 cup warm water
big pinch salt
Directions:
Mix flour, salt, and water until it forms a playdough like consistency.
Put plastic wrap over the bowl and let it rest for 5 minutes. Heat a skillet or griddle over medium-high heat.
Roll the dough into balls about the size of golf balls. With a tortilla press, line the top and bottom with circular pieces of plastic grocery bags (this keeps it from sticking). Put the ball in the center of the tortilla press.
Put the top piece of grocery bag over it and press down a little.
Then close the tortilla press. Open it up, rotate the plastic circles (and dough) 180 degrees and press it down again.
Put the tortilla into the hot pan/griddle. Let it cook for 30 seconds, at which point it should release from the pan. Flip it and cook another 30 seconds, then flip it a third time for another 30 seconds.
Then place the tortilla in a towel-lined basket or bowl and cover it up. Continue to stack the tortillas in there as they cook - it's the final part of the cooking process and keeps them warm for the tacos.
