Roasted Purple Cauliflower

Cauliflower is just more fun when it's bright purple, right? This is such an each and delicious way to prepare it, and the color looks awesome on your plate. I couldn't stop eating it.

Ingredients:
1 head purple cauliflower (white works too, just not as pretty)
a few glugs of olive oil
pinch herbs de Provence
plenty of salt and pepper
pecorino

Directions:
Preheat oven to 450. Slice cauliflower and break into florets. Put on a foil-lined sheet pan, drizzle liberally with olive oil, sprinkle liberally with salt, add herbs de Provence and toss it all together. Pop it in the oven.
Roast for about 20-25 minutes, turning once, until starting to get nice and brown. Grate fresh pecorino on top and pop back in the oven for about 5 minutes until the cheese is all melty.
