Sautéed Bay Scallops on Cauliflower Purée

Bay scallops are the best. The season is November through March so Jamie and I always load up on them anytime we go to Southampton. They're sweeter and smaller than sea scallops. The flavor is so good so you don't need to add much. Simple butter and lemon is really all you need. Yum!

Serves 2
Ingredients:
1/2 lb bay scallops
1 tbsp butter
Zest and juice of half a lemon
1/4 cup flour
Salt and pepper
Cauliflower purée

Seared Scallops with Ramp Butter

This is a great spring dinner. The puree is a perfect canvas for the scallops, and the ramp butter is a nice flavor and glaze. Be sure the scallops are dry before you sear them to get a nice sear. 

Serves 2
Ingredients:
10 sea scallops
1/4 cup dry white wine
1 tbsp butter
1 tbsp olive oil
1 1/2 tbsp ramp butter (recipe here)
salt and pepper

Bay Scallop Gratin

It's bay scallop season! Peconic Bay Scallops are so, so good. Go get some if you can! They are so little, and tender, and sweet. I made them two ways for Valentine's Day - this was Ina Garten's recipe. It's so tasty! Great for a dinner party because it cooks quickly and you can prep ahead. The topping is incredible. 

Ingredients:
1/2 lb bay scallops
2 tbsp butter, room temperature
2 gloves garlic, minced
1 small shallot, minced
1 slice prosciutto, chopped
1 small handful parsley, chopped
1/2 tbsp lemon juice
1 tbsp vermouth
kosher salt
black pepper
2 tbsp olive oil
1/4 cup panko
2 tbsp wine

Easy Scallop Spaghetti

I love going to Cor J in Hampton Bays for seafood. It's the best. Big variety and reasonably priced. This time I went looking for Peconic bay scallops, but unfortunately they didn't have any that day. I got sea scallops instead. I wanted to do a simple pasta and found this recipe online that sounded perfect. It was really simple, fresh, and light.

Serves 2
Ingredients:
6-10 sea scallops
2 cloves garlic, peeled and crushed
1/2 lb spaghetti
olive oil
butter
handful parsley, cleaned, dried, and chopped
white wine

Fried Scallops

Did anyone else see the Fried Scallops recipe in the Times? It's great! So simple. I quartered it to have it as an appetizer and it was a huge success. I will definitely be making them again. I also mixed up a quick sriracha mayo for dipping.
Ingredients:
1 lb sea scallops
1/4 cup flour
1/4 cup corn meal
1/4 tsp baking powder
1/2 cup canola oil

mayo, sriracha, and a squeeze of lemon for dipping
