Cacio e Pepe

This is almost as simple as you can go for pasta, and you can probably make it with ingredients you already have in your kitchen. The freshly crushed pepper gives it a real kick. You can go as heavy or light on the pepper as you want.

Serves 2
Ingredients:
2 tbsp whole black pepper corns, crushed in a morter in pestle with some larger chunks remaining
3/4 cup freshly grated pecorino
1/2 box spaghetti

Directions:
Boil and salt water and cook pasta until al dente. Warm up a bowl (can do it by pouring some hot pasta water and swishing it around). Pull the pasta out of the water using tongs, letting it drain above the pot for a few seconds before putting it into the bowl.
Toss with cheese, pepper, and a bit of pasta water.
Serve with some more freshly grated cheese.
