Dinner for One - Tuna Melts

Jamie was out so I wanted to make a simple dinner for myself. Of course, it turned a little more complicated, but into a delicious special dinner for one. Great for dinner or lunch. If you don't have all the extra ingredients (carrot, radish, etc) that's fine. You want the onion or some scallions or something for crunch and flavor, and the rest adds a nice crunch too but you don't need to go buy a million ingredients if you don't have them. 

Ingredients:
2 cans of tuna in olive oil, drained
1/2 a small red onion, finely diced
1 radish, diced
1 stalk of celery, diced
handful of grape tomatoes, cut up
zest and juice of 1/2 lemon
1 tbsp mayo
1/2 tsp dijon
pinch of herb de provence
pecorino
Swiss cheese
Monterey Jack
Cheddar
slices of crusty bread

Directions:
Heat the oven to 500. Sprinkle Pecorino on the slices of bread and put in the oven while you prep the tuna. 
Grate a mix of cheddar, swiss, and Monterey Jack cheese. 
Gently mix the tuna, onion, celery, radish, tomato, lemon zest, lemon juice, mayo, mustard, herb de provence, and a little salt and pepper. Season to taste with lemon, onion, salt, and pepper.
If the cheese hasn't melted on the toasts, throw them under the broiler quickly. (Be sure to watch them - I burned mine a little.)
Top the cheese toasts with the tuna mix.
Top those with cheese. 
And put them under the broiler until they are melty and starting to brown.
