Vegetable Garden-May 18 (Week 9)

The garden looks great! I planted the peas on March 16, planted most of the tomatoes, hot peppers, and eggplants (with Wall O Waters to keep them warm), the cucumbers and zucchinis form seeds, and the lettuce, transplanted, on April 20. I hadn't been out in a few weekends and everything is looking happy.
Even though there have been some cold nights, the Wall O Waters seem to have kept the tomatoes, eggplants, and peppers happy, the snap peas are almost 2 feet high, the zucchini and cucumbers have come up and look healthy, and the lettuce is already huge. My parsley also survived the winter from last summer and is enormous.

Seedlings!

Now that spring is on the way, it's time for veggie garden 2012! I planted a few seedlings that need to start indoors. I got a seed starter tray and a few packets of seeds - hot peppers (a variety so we'll see what we get!), eggplant (another variety), Sweet 100 tomatoes, and Big Boy tomatoes. They're happily living on my windowsill in the city right now. I'll probably have to put some of them into pots or bigger containers before May, but once it's warm enough outside, they can go in the ground. I'll harden them off on my fire escape first. Hope they all stay happy and healthy!

Vegetable Garden Week 20

May garden was looking a litle downtrodden last weekend with the deer and all of the hot sun, but it looked a lot better this weekend. The Swiss Chard came back and there were lots of tomatoes and a big eggplant. There are a few little jalapenos growing and some zucchini that will probably be the perfect size next week. There was a beautiful yellow brandywine tomato that still had to ripen a bit, but I picked it to ripen in the city off the vine because I was afraid it would fall off during the week. I may make more Babaganoush with my big eggplant because it was so tasty last time, although I'm tempted to grill it too because it's so fresh and sweet. We had some Swiss Chard sauteed with garlic and chorizo last night - with a drizzle of maple syrup - and some crispy fried zucchini blossoms. Also some great August corn (not from my garden, but really really fresh and tasty).

Babaganoush

After picking a fresh eggplant from the garden, I'd already tried grilling one, so I thought I'd make babaganoush - I love babaganoush and always order it at Middle Eastern restaurants. It's a very similar process to making hummus, but it has the great tang of eggplant. It definitely helps to have a fresh eggplant, so give all the eggplants at the grocery a little squeeze and be sure to pick the firmest, smaller eggplants are usually firmer, sweeter, less bitter...

I grilled the eggplant cut in half and cut hash marks on the skin side which helped it grill evenly and helped dry it out (you don't want watery babaganoush). It's really tasty and has a wonderful, smooth consistency. Serve with warm or toasted pita.

Ingredients:
1 medium eggplant
1 glove garlic
juice of 1/2 a lemon

Vegetable Garden Week 17

After being overloaded with zucchini last weekend, this weekend I only had one little baby! These are the fruits of the garden this week. There are still a few little rainbow Swiss Chard, although most of them have been smothered by the monster zucchini plants. The Green Grape Tomatoes are doing really well and taste amazingly sweet and delicious (I'm planning to make salsa tonight with the Green Grapes and the jalapeno - hopefully it'll carry the same kick as its predecessor.) The eggplant will either be marinated in olive oil and garlic and grilled in slices or made into babaganoush tonight, not sure which yet. This is the second eggplant I picked this weekend - the first was a little bigger and we tossed it with olive oil and salt and grilled it - tangy, fresh, and sweet. So much firmer than those you get at the grocery, but as I've said, watch out for the thorns up top!

I've also been having fun with my hipstamatic app on my iPhone and here is my adorable niece Grace proudly holding the eggplant (looks better on the small iPhone screen). I wish I had a video because she was waving it around in the air saying, "Robot robot, robot robot," for no apparent reason - so cute.

Garden Vegetable Pasta

After picking an eggplant, some zucchini, and some basil from my garden I came back to the city to make a summery dinner. I did go out and buy some tomatoes and garlic (my tomatoes aren't ready just yet). I also used rachette pasta because I knew Jamie would like it, but use anything you've got at home. This is great and summery and is a good way to use your veggies - or those you pick up at the farm stand!

Ingredients:
3 small zucchini
1 small eggplant
3 garlic cloves, crushed
3 tbsp extra virgin olive oil
1 tsp (or more to taste) red pepper flakes
4 plum tomatoes, cut into cubes
1 tsp tomato paste
2 tbsp water
Basil

Directions:
Heat 2 tbsp olive oil in a large skillet. Add the garlic. Cut the eggplant into 1/2 inch cubes and add to the pan. Saute until they start to soften.

Vegetable Garden Week 15

After my hiatus in Greece, my garden was booming! The peas were finished and turning brown and the Swiss Chard were taken over by zucchini, but everything else was super happy. The yellow brandywine tomato plant is about 6 ft tall with a few big, green tomatoes. The thing is like a tree! It got so heavy I had to go buy steaks to position on either side of the garden and tie the cage to them with twine - hopefully soon those green tomatoes will turn yellow so we can eat them! The three better boy tomato plants were covered in green tomatoes (I've learned with heirlooms the plants tend to get pretty big but you get less fruit, so the yellow brandywine is huge but just has two tomatoes on it while the better boys are smaller but each had about 6-10 tomatoes already) and the green grape tomato plant has tons of little green tomatoes, some of them already edible and sweet ad delicious.
There were 4 eggplants on the eggplant plant - 1 ready to eat - so sweet and tasty. I was surprised. I've never grown eggplant before and I was kind of expecting to just get one eggplant all summer. This little plant seems to be pumping them out, plus it has really pretty, light purple flowers. Watch out for little purple thorns on the flowers and eggplant stems!

Moussaka

Moussaka is one of my favorite Greek recipes. I love eggplant and the great flavors of cinnamon and onions and garlic in the tomato-meat sauce. This is a great alternative to lasagna and is good for feeding a large group (there were six of us and we ate the moussaka twice - once the first night and then another night we ate the leftovers, yum!). It's a bit of a labor of love, so you have to set out an hour or two to make it, but it's well worth it. It also tastes even better the next day.

Ingredients:
4 eggplants
Olive oil
4 medium onions, chopped
6 garlic cloves, minced
1 28-ounce can crushed tomatoes in tomato puree
2 teaspoons dried oregano
1 cinnamon stick (or 1/2 teaspoon ground cinnamon)
2 tablespoons balsamic vinegar (maybe more to taste)
2 pounds ground beef
1/2 cups dry white wine
Black pepper to taste

Vegetable Garden - Week 3

My garden is starting to look like a real garden! I went to the Union Square Green Market last week and was pleased to find that all of the vegetable plant vendors are back! I browsed several of them to find the plants I was looking to use. I found a pretty big green grape tomato plant (produces bright, almost neon green cherry tomatoes that are tart and sweet and look beautiful in salads) and a small yellow brandywine tomato plant which is supposed to make big, yellow beef steak tomatoes. I want to plant a few big beef tomatoes as well. The heirlooms are definitely pretty and tasty, but the big beef tomatoes straight from the garden are equally as tasty and they're much hardier and produce more tomatoes. To hedge my bets, I want a few heirloom and a few big beef for a good mix. I also bought an eggplant plant - first time planting them and very excited.
