Fried Rice-Style Quinoa

I was marinating flank steak the other night and asked Jamie what he wanted as a side. He requested peas. The flank steak was marinating in soy sauce, ginger, garlic, etc (Asian-style), so I was trying to think of an Asiany way to make peas - fried rice! I had just bought a bag of quinoa, so I figured I'd make it as if it were fried rice. It was delicious (and cheap and easy). Jamie loved it, and it even tasted great the next day.

Ingredients:
1 cup quinoa, cooked following package instructions
1 1/2 tbsp vegetable oil
2 tsp sesame oil, separated
1 1/2 cup frozen peas, thawed
1 large carrot, peeled and diced
3 scallions, thinly sliced (white and green parts)
2 eggs, beaten
1 pinch red pepper flakes
soy sauce

Directions:
Heat vegetable oil and 1 tsp sesame oil in a large skillet. Add the scallions and saute until starting to soften, about 2 minutes.
Add carrots and continue to saute for about a minute or two. 
Add the thawed peas and a big pinch of salt and saute until cooked through.
Mix about a tablespoon of soy sauce into the eggs, then add the eggs, red pepper flakes, and quinoa to the hot pan.
Stir it up quickly, cooking the eggs into the veggie/quinoa mix.
Drizzle remaining tsp of sesame oil and mix. Season to taste with soy sauce, salt, and pepper.
