One-Eyed Connolly

There are a lot of names for this - One-Eyed Connolly, Egg in a Basket, Egg in a Hole... We always called it a One-Eyed Connolly. I made one the other day and decided to spruce it up a little. We didn't have much in the fridge that morning, but we did have some cream cheese and we always have spices. I split the bread in half (there's an easy trick to that) and spread a thin layer of cream cheese and spices and put it back together. It was so tasty and really added something extra. Mmm. I also always love having a little salad with my eggs.

Serves 2
Ingredients:
2 pieces of bread (I used whole wheat, but whatever you want/have on hand)
2 eggs
butter
cream cheese
mix of cumin, paprika, cayenne, and salt

Directions:
Lightly toast the bread slices in a toaster. This makes it really simple to slice them in half with a serrated knife.
Spread a thin layer of cream cheese on one inside slice of each.
Sprinkle with the herbs (and feel free to mix them up or add some parm).
Close them back up.
Using a glass, punch a whole out of each.
In a big skillet, heat the butter over medium-high. Add the bread and toast one side. Once it gets brown, flip it.
Crack the eggs into the holes. Remove the round punch-outs once they're toasted. Cook the fried egg to your desired doneness (I like them runny and Jamie likes the yolks totally cooked) flipping if you want. Also be careful to lower the heat if the bread starts burning. Sprinkle with salt and pepper and serve.
