Ramp Spaghetti

This is a Maria Batali recipe - very simple and just highlighting the ramp flavor. This is a perfect for a quick weeknight dinner.
Ingredients:
1 bunch ramps, cleaned, roots removed, and separated into green parts and pink/white parts
olive oil
pinch red pepper flakes
toasted breadcrumbs
salt and pepper

Directions:
Boil water and cook spaghetti following box instructions. Heat olive oil (1-2 tbsp) in a skillet. Add the ramp bottoms and cook until softened.
Season with salt and pepper and add red pepper flakes to taste. Add the ramp leaves (and more olive oil if you need it) and saute until wilted.
Drain the pasta and add directly to the pot, tossing to mix. Season to taste with salt and pepper.
Put into bowls and top with toasted breadcrumbs.
